Good News In February

I can't quite believe what's going on in Washington with the stimulus, and there's something weird going on with my computer this morning but I can give this bit of good news: The recipes in Fresh Food Fast continue to rock my world. Last night I made sweet potato, collard and coconut milk soup and it was fresh, it was fast and it was delicious. Yet another winner from that book.

I would share the exact recipe, but I'm not at home. Here's what I remember:
2 onions chopped (i had one and used one)
3 cloves garlic minced
4 cups peeled 1-inch dice sweet potato (i don't think i had that much)
1 jalapeno minced
1 TBSP ginger minced
here's where it gets tricky - 1 tsp tumeric and 1/2 tsp coriander, or the other way around!
1 can coconut milk
1 small bunch collards
1/2 cup cilantro

saute onions for 3-4 min w/salt until soft -- add everything else plus 2 cups water (i used chicken stock; if you use water, add salt) except collards; bring to boil, cover, lower heat and simmer for 15 min. Add collards, cook for 10 more min. Toss in cilantro, serve over jasmine rice.

In the book, they say to fry tempeh until crisp and top soup with that. I didn't have tempeh so I pressed and fried tofu and sprinkled with sea salt and put some strips of that on top. it was good--not necessary, but very good.

Really delicious. Super easy. I hope you like it! I'll update tonight with exact recipe.

Oops! I missed the follow up -- it's 1 tsp corriander and a half tsp of tumeric. Sorry to have been a little checked out. I'll double check the recipe--there's lime. I didn't have any -- I don't think it mattered.
